Aug. 29th, 2011 08:47 pm My grandma sent me the recipe for the magically delicious lemon bars she makes. (Mainly for
wrabbit . Because me+baking=moderate disasters, usually). I have omitted the longwinded explanation my grandma provided of who taught her to make them. She also advises "I never do the grated lemon rind-- too much trouble".

LEMON BARS Crust Filling 1 cup butter or margarine 4 eggs slightly beaten 1/2 cup powdered sugar 2 cups sugar 1/2 teaspoon salt 1/2 teaspoon baking powder 2 cups flour - unsifted 1/4 cup flour 1/4 cup lemon juice Rind of 1 lemon, grated Cream the butter and powdered sugar. Add salt and flour and mix well. Pat into 9"X13" greased baking dish. Bake at 350 degrees for 15 to 20 minutes. To make the filling, mix all ingredients and pour over hot crust. Bake at 350 degrees for 20 to 25 minutes. When done, sprinkle with powdered sugar. Cut when cool. |
